Which resort is calling your name?

The Inn at Mattei’s Tavern, Auberge Resorts Collection

This gem of California’s Central Coast has a real sense of story, surrounding guests in local lore while also pampering them with the celebrated flavors and wines of the region. Once a popular stagecoach stop during California’s Gold Rush, and an under-the-radar gathering place through Prohibition, The Inn at Mattei’s Tavern has stepped firmly into the 21st century, offering reimagined accommodations, dining and amenities in the Santa Ynez Valley. Destined to be a landmark, The Inn opens a new chapter in fall of 2022, welcoming guests to a haven of relaxation amidst old-growth palm trees and lightly scented olive groves, where life is truly good. The Inn at Mattei’s Tavern officially welcomes guests February 1, 2023, and is currently accepting reservations.

-Stay-

Cottages

Stay in one of Mattei’s Tavern’s original cottages, which have been painstakingly restored to showcase their rustic details while excluding a sense of sophistication. Exposed beams, warm wood floors, ample outdoor living space with a daybed swing, separate great rooms for lounging and catching up with your favorite people, fire pits and more make for indulgent, intimate stays.

Guesthouse

Choose a studio within the centrally located guesthouse, housing airy, clapboard bedrooms that marry original structures and details, such as white, painted wood cladding, with local artwork and modern amenities. Sit and sip your favorite wine in a rocking chair on the enclosed porch, soak in the clawfoot tub, or gather around the outdoor fire pit or indoor fireplace.

-Dine-

Savor the flavors of California cuisine at The Inn at Mattei’s Tavern’s several dining venues. While each has its own personality and aesthetic, the common thread is simple: fresh, local California food. Here’s what you can expect:

The Tavern: Currently open to the public, The Inn’s signature eatery features chef-driven, seasonal dishes, with a hint of honest ranch roots. Indulge in grilled dishes and vegetables, classically prepared, alongside seasonal specials and, of course, complemented by an exceptional, California-focused wine list.

The Bar: Imagine the time of the Gold Rush, then the surreptitious followers throughout Prohibition, with today’s local craft beers, progressive, yet approachable cocktail menu and a wide menu of bar snacks, and you have the perfect roadside bar.

Felix Feed & Coffee: Start your perfect Central Coast day with an excellent espresso at this European-style coffee bar named for Mattei’s original owner, alongside freshly baked pastries, sweets and bread.

The Shed: If it’s the kind of day when the hours pass by unnoticed at The Inn’s wine country pool, stop by this unassuming eatery in the heart of the property for fresh, delicious bites to eat poolside.

Gin’s Tap Bar: Don’t miss this enticing tap bar and smokehouse, which pays homage to Gin, longtime chef of the original Mattei’s, who was of Chinese descent. The juxtaposition of traditional ranch smoking techniques with the flavors of Shanghai is out of this world. Gin’s will also host local musicians, ranging from bluegrass and jazz to country, folk and pop.

-Discover-

Whether it’s a wine country cycling tour and private tasting, or stories and s’mores around the firepit, The Inn at Mattei’s Tavern is best experienced with a sense of discovery and curiosity. The bustling, social community of Santa Ynez welcomes visitors with open arms, eager to show off their tiny town. Here are just a few of the creative guest experiences we love:

Infusion Hour: Attend this weekly event during which guests infuse their own bottle of olive oil with fresh garden ingredients while learning about the production process.

Paella Night: Learn the secrets of the perfect paella alongside Executive Chef Rhoda so that you can wow your friends once you return home. Sip a glass of Mattei’s Sangria, then choose from two different varieties of paella to make. Finally, indulge in your creation with other workshop guests.

Learn the Art of Uni: Learn to harvest, clean, open, prepare and plate uni, then make your own uni toast or custard, while sipping old vs. new world wine pairings.

Indulge: Spend a couple hours - or all day - in the Lavender Barn, surrounded by delicately scented olive groves and indulging in age-old remedies drawn from the bounty of the land. Sink into sumptuous spa treatments in one of five private rooms, or bathe in the water lounge, with doors that open to the outside. Don’t miss THE WELL, a guided sleep meditation for Auberge Resorts Collection.

Stanly Ranch, Auberge Resorts Collection

Seeking room to roam? We’re enamored of the 712 acres of the new Stanly Ranch at the southern edge of Napa Valley. This highly lauded setting offers extraordinary luxury, infused with all the elements of wine country one seeks, from lush flavors by the glass and on your plate, to the fresh, convivial feel of the valley. Family and friends can gather in a place that feels like home, but that caters to every whim before there’s even a want. Surrounded by vineyards that come right to the edge of the guest accommodations, the ranch is the perfect blend of the agrarian and affluent lifestyles.

-Stay-

Suites

At once indulgent and casual, the spacious suites at Stanly Ranch exude a pervasive sense of refined luxury. Choose from one-, two- and three-bedroom suites that feel like a home away from home on the ranch, with well-appointed living rooms with comfy sectional sofas, large dining tables, fireplaces, outdoor living space with seating and outdoor showers in a private garden. It’s the ultimate in bucolic wine country living.

Guest Rooms

Nothing lives up to the “modern farmhouse” aesthetic quite like the Stanly Ranch guest rooms, which while giving a nod to ranch life, boast progressive designs with open layouts, doors leading to generous private terraces with firepits, ample seating areas and more, designed to bring the outdoors in and inspire relaxed moments with loved ones.

-Dine-

Stanly Ranch’s culinary program celebrates the bounty of the land through seasonally driven menus and a cuisine that is both holistic and experiential. Guests don’t simply learn of the connection between the local land, ingredients, makers and farmers - they taste it in every bite and sip. Here’s what you can expect:

Bear: The centerpiece of ranch dining, Bear is open for breakfast, lunch and dinner - low-key mornings on the terrace give way to a buzzy lunch and a dinner service that is all about laid-back luxury. Taste the results of Napa Valley’s finest, from gem lettuces with green strawberries and lavender vinaigrette, to za’atar-grilled ruby snapper with castelvetrano olives.

Basin Bar: Thursday through Sunday, guests gather in the Provence-style setting of Basin Bar, adjacent to the grand pool. Light, plant-forward dishes are the perfect bite on warm days, complemented by colorful craft cocktails and a lighthearted wine program drawing from local, but lesser-known areas.

Gavel: Mingle with guests and locals alike at the delightful Gavel coffee shop, where Sightglass Coffee specialty roasts mix perfectly with Chef Harry’s freshly baked pastries.

-Discover-

As with Auberge sister property The Inn at Mattei’s Tavern, the guest experience at Stanly Ranch is as much about the surrounding wine country as it is about one’s accommodations.
